eating in! Chicken and Tofu Biryani

Fresh cut cilantro, thai basil leaves and a mix of spices like garam masala make this very tasty biryani dish!
Ever since I brought my Instant Pot home from Target it's been such a joy to experiment with recipes that make for restaurant-worthy dinners. After trying deliciously tasty chicken biryani at a nearby Indian restaurant with AndyPom, I definitely wanted to try to make an Instant Pot version. The many bowls of tasty biryani topped with cilantro and caramelized onions were just as yummy as eating out! Add the raita sauce on the side to help cool down any spiciness and it was the perfect combo. I pretty much followed the Ministry of Curry's recipe exactly except for a few modifications:
-2 1/2 tsp of Garam Masala: since I wanted a little more kick of seasoning but for it to not be overly spicy
-Ground Ginger: substituted this in since I thought it may be a little trickier to grate ginger root myself
-Mexican Spice Blend: substituted the Kashmiri red chili powder since it was easier to find
-Lime Juice: substituted the lemon juice due to having lime versus lemon juice on hand
-Almond Milk Yogurt - substituted the plain yogurt due to dairy allergies
-1lb of tofu and 1lb of chicken breasts (cubed): so we could have a mix of veggie friendly variety. I also chopped the tofu and chicken into tinier pieces so they'd cook faster and get more marinaded all over
-Skipped the saffron and hard boiled eggs: since saffron we found is pretty pricey and we had enough protein without the added eggs
-4 wedges of jalapeno: AndyPom prefers spicier dishes while I'm more on the mild side, so I found a happy medium
-Cucumber (chopped): substituted the tomatoes in the Raita sauce. We personally loved the crunchiness and cooling flavor of the cucumber pieces
-I opted for using a regular pot on the stove to caramelize the onions since I got a Burn signal on the Instant Pot when I first made this recipe
-After the quick release we realized the dish was a little soupy, so we used the Saute mode to mix the biryani until it reached the thicker consistency
